Chicken Tikka Masala

Light and Easy Chicken Tikka Masala Recipe!

Sauté 1 chopped onion in veg oil for ten minutes.

Add 2 cloves chopped garlic, cook 2 minutes.

Add 450g/1 lb chicken, brown on all sides.

Add 1 tbsp of each: paprika, garam masala, cumin, ground coriander, turmeric.

Add 1tsp crushed pepper or cayenne.

Cook until aromatic, about 1 minute.

Add 450mL crushed tomato and 250mL/8fl oz chicken stock.

Let simmer for 30 minutes. Add 120mL/4fl oz double cream and stir well.

Garnish with parsley and serve over rice.
